SALT! I am in love with this spice, condiment, pantry staple - however you want to classify it! Salt is so important to baking sweet desserts. It elevates and brings out the flavors to the flour, butter, vanilla, and even the sugar! Without salt you wouldn't be able to enjoy any cookie. Trust me.
With salt comes a few different types: table salt, sea salt, flaky salt. In goodesmith cookies, I use sea salt within the dough. Once again this elevates all the ingredients present in the dough. However, on top I use a different salt. Finishing salt has thick, large grains that allow you to crunch on. So in a single bite you get that coveted salty-sweet taste. (My mouth is watering as I type this). I use Maldon salt, but I know there are several brands out there.
All in all, salt is important and you can't live without it. Even the bible mentions its importance in Matthew 5:13 - "You are the salt of the earth. But what good is salt if it has lost its flavor?" Boom.
